And as usual, I used a basic edible cookie dough for the crust instead of using actual crushed cookies. 🍪 It's cheaper, quicker and a bit healthier too since you can control how much (or how little) sugar you'd like to add. 👍 Not to mention, pre-made GF cookies are often so full of cr*p. 👀

Quite possibly the best summer side dish: mango salad. 💛😊 You can find the exact recipe on my blog {link in bio}, but really it's so simple. Just fresh mango with finely chopped bell pepper, red onion, fresh chilli and a tonne of parsley + lime juice, salt and black pepper. It doesn't get easier than that and it's so delicious. 😍

LEMON MUFFINS 🍋😍 - I was so bored with the rain last Sunday and decided to bake something fun. They turned out amazing! So soft and fluffy. 💛 I added some cream cheese frosting on top and a leftover homemade angel slice cut up into bites. A bit OTT yes lol, but absolutely delicious!

R E C I P E: 🍝🧀🍋 super easy garlic & lemon pasta {link in bio} with lots of fresh parsley and cheese on top + some leftover grilled chicken. 💛 Sometimes you just need a big bowl of comfort food that takes very little effort to make and this is my go-to. It’s so simple, done in seconds (well, about 15 mins) and it’s so good. 😍

I love batch cooking chicken (on the griddle) and keeping it in the fridge for quick meals like that. But otherwise a quick fried or poached egg is another great choice to add on top. 🍳🙂

P.S.: for the pasta, I used gluten free spaghetti from @asda . I quite like their GF pasta + the price is amazing compared to some other supermarkets/brands (only 85p). 👍

R E C I P E - 🍰💛 I think I just made my best sponge cake ever so far 😊 {link in bio} // Do you struggle with gf sponge cake that comes out a bit dry and underwhelming? Or that dries up in seconds? If so, you're not alone. 😅 You guys know I love baking, but to be fair, cakes aren’t my specialty and were never really a focus of interest before. But recently I decided it was time to figure this one out. 🙉 And after spending some time experimenting, I finally made a sponge cake I’m really happy with.

In the end, I ditched the classic recipe and added a couple of other ingredients to add moisture. And it turned out so tender, springy, with just the right amount of moisture. 😍

P.S.: I made this using a standard all purpose gluten free flour blend (the one from @asda which is actually brilliant and so affordable - only 80p). So no hard to source flours this time. 😉

R E C I P E: some yummy Welsh cakes I made the other day 🍪😊 {link in bio}, with apricots and walnuts (instead of currants). I just love how easy they are to make. They’re cooked on a griddle (or a frying pan) so there’s no faffing around with baking either. And you can just pop them in the toaster for a quick breakfast or snack. The perfect accompaniment to a tea. 💛

I didn’t grow up eating Welsh cakes where I’m from and never got to try them before adopting a gluten free diet so, to be honest, I have no idea what a normal welsh cake taste like! haha 🙉 But I worked on these with my non-GF boyfriend (a.k.a. my personal taste-taster) and he’s given these a 10/10. 😍 He even got himself a packet of M&S normal Welsh cakes to compare (he takes his role very seriously lol). It took a bit of experimenting (and several days of eating Welsh cakes for breakfast lol), but I'm pretty happy with the final result. 😄

R E C I P E - 🥞❤️ I know I said just recently that I'm not really into pancakes, but it looks like I'm on a kick lately. 😆 And I think I’m officially in love with banana flour. 🍌😍 Some of you may remember the taco shells I made with it a while ago {swipe to see a pic}, but the bag had largely been gathering dust in the cupboard ever since. Well, I’ve been experimenting with it these past few weeks and I love it! It’s such a good gluten free flour with a great texture (and as a bonus, it’s pretty healthy too).

I have a few banana flour recipes to post on my blog (soon), but here’s one I’ve really been enjoying lately - healthy, yet really fluffy, yummy pancakes. Which we had with sweetened vanilla cream cheese and a sprinkle of cinnamon sugar. 😊👌
