Mexican Prawn & Avocado Rice Bowl

This is such an easy, healthy and yummy Mexican style recipe. Its simple combination of fresh and cooked ingredients makes it the perfect summer meal or quick fix when you don’t feel like cooking, but still want good homemade food. And it’s absolutely delicious.

Feel free to substitute the prawns for something else, like chicken. Basically anything mixed with garlic, lime and fresh coriander usually does the trick for me! It would work well in tacos or fajitas too, instead of served with rice. πŸ˜€

(Serves 2)

Ingredients

  • 185g cooked king prawns
  • 1 lime
  • 2 avocados
  • A few garlic cloves
  • Fresh coriander
  • Cayenne pepper
  • Black pepper
  • 1 or 2 Tbsp olive oil
  • Rice
  • 1 tin of sweetcorn

Directions

  1. Put some rice to cook.
  2. Finely chop the garlic and coriander and cut the avocados into cubes.
  3. Pan fry the cooked prawns and garlic in olive oil, on medium heat, for a few minutes. Add cayenne and black pepper, to taste.
  4. Turn the heat off and gently mix the prawns with the avocado cubes and as much coriander as you want – the more the better and don’t discard the stalks; they’re the most flavourful bit! πŸ™‚
  5. Serve alongside rice and sweet corn with some freshly squeeze lime juice on top.
