Curry Coconut Breadcrumb Bites | Gluten Free, Low Carb & Flourless

Super easy, fuss free coconut breadcrumb bites coated with only 3 ingredients: desiccated coconut, curry powder and egg.

It’s that time of the year again when the prospect of a new year ahead and excessive food consumption during the holidays merge together to give us a newfound sense of motivation. And no matter what your goals are for 2018, it’s safe to say that better health often creeps in at least somewhere in the list for most people. Maybe it’s finally using that gym membership that’s been gathering dust for months or cleaning up your diet a little. But wherever you are in your journey, the upcoming new year gives us a blank slate that often serves as the perfect excuse to make healthy changes.

This, for me, usually translates into reducing my carb intake a bit, eating less processed foods and focussing on eating a tonne of fruits and vegetables as well as healthy sources of protein and fat. And so as I was eyeing up some delicious (but really so not healthy) chicken nuggets at the supermarket, I slowly stepped away from the free from section (I love you, but I think we need a break! lol) and decided to make my own healthy version.

These are completely flourless, low carb and of course gluten free. But you don’t even need to care about the health aspect to enjoy these. Whether you’re looking for a healthy recipe, a wheat free breadcrumb alternative or just want to try something a bit different, give this coconut breadcrumb a try. It works pretty well and yields a tasty, crispy coating that you really don’t need to be on a health kick to appreciate. 😉

I’ve been making a similar recipe for months {coconut crusted chicken}, but this time I decided to ditch the flour/grains completely and ground the coconut. You can also use coconut flour instead; ultimately it’s the same thing except desiccated coconut is cheaper, hence my preference for it! So if you have a spice grinder at home and want to save some money, I say desiccated coconut all the way.

Curry coconut breadcrumb bites recipe:

Difficulty level: very easy

Preparation time: 15 mins

Cooking time: 25 mins (for chicken) or 10-15 mins (for prawns)

Cooking Temperature: 200C (about 390F)

This recipe yields enough ‘breadcrumb’ for about 300-350g chicken or prawns.

Ingredients

  • 60g desiccated coconut (or coconut flour)
  • 5g / 1 Tbsp curry powder
  • 1 large egg
  • Salt
  • Black pepper

Optional: for extra flavour, you can marinate the chicken or prawns first. I marinate mine for a few hours in a mixture finely chopped garlic, gluten free soy sauce, rice vinegar and lemon juice.

Directions

  1. Pre-heat the oven to 200C (about 390F) and prepare a baking tray (either line with parchment paper or use a non-stick oil spray).
  2. Grind the desiccated coconut in a spice or coffee grinder.
  3. In one bowl, mix the ground coconut with the curry powder, salt and black pepper (or any other seasonings of your choice).
  4. In another bowl, beat the egg.
  5. If using chicken, cut into small cubes.
  6.   7. Bake on the middle shelf and switch on the grill for a couple of minutes at the end for a crispier result. For chicken: 25 minutes; for prawns: 10-15 minutes.
