Easy Cauliflower Cheese Flat Bread

Healthy and so easy high protein/low carb cauliflower cheese flat bread made with grated cauliflower, eggs and mozzarella.

I’m sure everyone who’s been on a diet in the last few years and has access to the internet is familiar with the infamous cauliflower flat bread and pizza base by now!

No, it doesn’t taste anything like ‘real’ bread. It’s no surprise really, but it’s best to get that straight from the start because if you make this hoping for it to be like bread, you’re at risk of being heavily disappointed. lol BUT, it’s a great option for those dieting or just simply wanting a low carb option. And as a bonus, it’s naturally gluten free which is great for us coeliacs/gluten intolerants of the world. 🙂

I went clothes shopping a few days ago and the more I had to repeatedly look at myself half naked in changing room mirrors, it dawned on me that I really need (well, want) to get back into shape! During the winter I could hide underneath baggy wooly jumpers, but dammit summer clothes really are not as forgiving… haha And although I just gained a few pounds and am not overweight by any stretch of the imagination, it’s crazy how much of a difference it makes, visually, when you also lose muscle tone! So I decided it was about time to get back into working out and clean up my diet a bit. Hence the cauliflower cheese flat bread lunch today. 😉

Due to the cheese, it’s not actually that much lower in calories than slices of bread to be honest, but it’s nutritious, high in proteins and low in carbs. The cheese is providing a good amount of calcium, cauliflower is a great source of vitamin C and K and the eggs are a good source of vitamin D and B12, among other things.

You can really play around with the ingredients ratio as well, depending on what you like. The one I made today (version 1 below) may be a bit on the eggy side for some. For a more cheesy version, try version 2 instead (further down below).

Cauliflower cheese flat bread recipe:

Preparation time: 10 mins

Cooking time: 15-20 mins (baking) + 5-10 mins (under the grill)

Temperature: 220C

Version 1: more eggy, less cheesy

Ingredients

  • 3 cups (354g) grated cauliflower (this is about 3/4 of a large cauliflower)
  • 1 cup (110g) shredded mozzarella
  • 3 eggs
  • 2 Tbsp plain flour
  • Salt
  • Black pepper
  • Oil (to grease the pan – I used a low calorie avocado oil spray)
  • Seasonings (optional: garlic powder, oregano, cayenne pepper, etc.)

Version 2: less eggy, more cheesy

Ingredients

  • 3 cups (354g) grated cauliflower (this is about 3/4 of a large cauliflower)
  • 2 cups (220g) shredded mozzarella
  • 2 eggs
  • Salt
  • Black pepper
  • Oil (to grease the pan – I used a low calorie avocado oil spray)
  • Seasonings (optional: garlic powder, oregano, cayenne pepper, etc.)

Directions

  1. Pre-heat ove to 220C.
  2. Grate the cauliflower and absorb as much liquid as possible with a clean kitchen cloth or paper towels.
  3. Add the shredded mozzarella, eggs and seasonings of your choice and mix well.
  4. Line a baking tray with parchment paper, lightly grease the parchment paper (I used a low calorie avocado oil spray) and spread the mixture about 1cm thick.
  5. Bake for 15-20 minutes.
  6. Switch to grill on and cook for a further 5-10 minutes or until the cauliflower cheese flat bread start to turn golden brown.
  7. Serve with your choice of toppings!
