Gluten Free Quesadillas with Avocado & Jalapeños

Delicious gluten free quesadillas made with Cool Chile Company soft corn tortillas and extra mature cheddar cheese, jalapeños and avocado for the filling.

When it comes to Mexican food, it’s impossible for me to think of anything I don’t like – it’s the best! – but one of my favourites is quesadillas. This classic dish is not only delicious, but so quick and easy to make that the combination is simply irresistible. It’s basically the Mexican version of grilled cheese, but so much better. 😉

You can fill them with pretty much anything you want which makes them incredibly versatile and suitable for any meal. Whether it’s a savoury breakfast, quick snack, packed lunch to bring to school or work or as part of a more elaborate meal for dinner, there’s never a wrong time for quesadillas!

And these combine some of the best things around: pickled jalapeños, cheese and avocados. 🙂

What I used in this recipe: Cool Chile Company soft corn tortillas.

As I talked about in my previous post {here}, Cool Chile Company is one of the only (if not the only) brand to have released proper gluten free soft corn tortillas in the UK. At least to my knowledge as I’ve never personally found any other in supermarkets! They can be found at Whole Foods, cost about £2.35 for 10 tortillas (which isn’t too bad for a gluten free product) and come in two different varieties, blue and white corn.

Difficulty level: very easy

Preparation time: 5 minutes

Cooking time: 5 minutes (per quesadilla)

Yields: 4 gluten free quesadillas

Ingredients

  • Soft corn tortillas (I used Cool Chile Company)
  • Extra mature cheddar (or cheese of your choice)
  • 1 avocado
  • Pickled jalapeños (I used Old El Paso)
  • 2 spring onions
  • Black pepper
  • Garlic powder (optional)
  • Olive oil

Directions

  1. Prepare the filling: grate some cheese and finely chop the avocado, jalapeños and spring onions.
  2. Heat a little bit of olive oil in a non stick frying or griddle pan on medium/low heat.
  3. Add a corn tortilla and cook for a few minutes, flipping from time to time with spatula, until bubbles/pockets of air form.
  4. Add the cheese, avocado, jalapeños, spring onions, black pepper and a bit of garlic powder. Be careful not to overload the tortilla as you need to be able to fold the quesadillas in half.
  5. Cover with a lid until the cheese is melted.
  6. Fold the quesadilla in half using a spatula and press down gently to make it stick.

Notes:

  1. For large quesadillas, use two tortillas (one at the top and one at the bottom) instead of folding in half.
  2. Place the freshly cooked quesadillas on (or wrap in) kitchen towel briefly to absorb excess oil.
