Pistachio Cornflakes Squares

I had a large box of gluten free Nestle Cornflakes lying around and seeing as I don’t really eat cereals that often, I decided to make some relatively healthy breakfast Cornflake squares instead. Made with bananas and peanut butter as a binder instead of marshmallows and with added pistachios.

Of course you can use any cereals or add-ins you’d like. I randomly put these together and am quite pleased with the flavour. The sweet and salty mixture between the bananas, syrup and peanut butter is always a winner to me. 😛


  • 3 cups Cornflakes (I used gluten free Nestle Cornflakes)
  • Pistachios (I used about 100g – with the shell still on)
  • 2 bananas
  • 2 Tbsp coconut oil
  • 4 Tbsp smooth peanut butter
  • 3 Tbsp golden syrup


Method 1 – Cooked in the oven

  1. Remove shells off pistachios and crush them into small pieces (I used a mortar and pestle).
  2. Mash the bananas and melt the coconut oil in the microwave first if it’s too solid.
  3. Mix all ingredients together and press the mixture into an oven dish. I layered mine with a sheet of baking paper first to prevent any sticking.
  4. Cook for 10 mins in a pre-heated oven (180C / 355F)
  5. Let it cool, refrigerate and divide into portions once it’s hardened.


Method 2 – Cooked in a pan

  1. Crush the pistachios and mash the bananas.
  2. Add the coconut oil and peanut butter in a sauce pan and melt on low heat.
  3. Add all other ingredients and cook for a few minutes, stirring constantly.
  4. Press the mixture into an oven dish.
  5. Let it cool, refrigerate and divide into portions once it’s hardened.
