My savoury breakfast this morning: gluten free Mexican style grilled sandwiches with refried beans, cheese and jalapeños. I woke up feeling like toasties, but wanting something a little different so I improvised these at random and they turned out delicious!
You could also add other things like hot sauce, salsa, onions, spring onions, tomatoes, oregano, etc. Basically any Taco or Fajita style ingredient. I bet homemade refried beans would make these even better too.
For the sake of simplicity though, I love how these don’t require much preparation at all. No need to chop or pre-cook anything, just put the sandwiches together quickly and go. That’s a winner to me, especially when it comes to breakfasts. And most importantly, they taste great as they are. 😉
- Brush a bit of oil (I used olive oil) on the heating plates of the toastie maker. If it has a temperature control setting, turn it on to medium heat.
- Make the sandwich.
- Cook for a few minutes or until the outer layer of the bread has turned crispy.
