Gluten free Hawaiian ham and pineapple pizza made with a Genius pizza base

Hawaiian Ham & Pineapple Pizza

I’m not a big fan of pre-made things in general, but my boyfriend spotted Genius gluten free pizza bases in the reduced section at the supermarket… and at just 75p for two, it was worth a try. I have to admit I expected them to be dry and generally not too great, but wow, they’re quite possibly the best pizzas I’ve made in a while. The pineapple chunks, on top of putting a lot of sauce, added moisture so I’m not sure what the result would be with ‘drier’ toppings, but these turned out absolutely perfect!

Of course, feel free to use any other bases or make your own, as I usually would.

Ingredients

  • Pizza bases (Genius gluten free)
  • Canned pineapple chunks
  • Honey roast ham (finely chopped)
  • Extra mature cheddar cheese

For the pizza sauce:

  • 4-5 Tbsp tomato purée
  • 3 Tbsp olive oil
  • 1-2 Tbsp dried basil (to taste)
  • Cayenne pepper (just a bit/to taste)
  • Black pepper (generous amount)
  • Salt (to taste)
  • 2-3 Tbsp water

Directions

  1. Mix the sauce ingredients and adjust quantities to your taste. Add more water if it’s too thick.
  2. Place the pizza bases on a non stick baking tray (optional: lined with parchment paper). Spread a generous amount of sauce, add the toppings and grate a generous amount of cheese.
  3. Cook in a preheated oven for about 12 minutes at 200C/390F.
