(for 3 medium chicken breasts / about 5 skewers)
- 2 Tbsp dried oregano
- A few garlic cloves (or 2 Tbsp garlic powder)
- 3 Tbsp red wine vinegar
- 3 Tbsp lemon juice
- 3 Tbsp olive oil
- Salt and black pepper
- Dice the chicken, marinate for 30 minutes and soak the skewers in water while you’re waiting.
- Preheat the oven to 200C, add the chicken on the skewers (feel free to add whatever vegetables you want) and cook in the oven, on a non stick baking tray, for about 25 mins or until cooked through.
- Serve with fresh parsley and more squeezed lemon juice.
