Healthy Banana & Peanut Butter Waffles

Healthy banana and peanut butter waffles served with butter and chocolate chips sprinkled on top. 😛

I improvised this recipe on the spot and it turned out so good! To the point that my boyfriend spent the entire breakfast commenting on how good they were, how the butter and chocolate melting together was absolute perfection and how he actually prefers them to my normal waffles. Not bad for a healthier version without added sugar or oil! 🙂

This recipe yields 6 large waffles.

Ingredients

  • 1 large banana (mashed)
  • 2 eggs
  • 2-3 Tbsp peanut butter
  • 3 Tbsp flaxseed
  • 5 Tbsp self raising flour (I used Doves Farm self raising gluten free flour)
  • Milk or dairy free milk alternative (just a bit / enough to make a proper batter consistency – thick, but not too thick. It should still run a little bit)
